Very Berry Pancakes

When the weekend calls for something special – show the ones you love that any day can be a holiday!  Celebrate the weekend with these Very Berry Pancakes and you’ll forget Monday is around the corner.  Better yet, save a few to freeze. Pop them in the toaster and treat yourself to an early morning weekday celebration too.

 Directions:
    1. In a bowl, mix together the flour, baking powder, salt and sugar.
    2. In a separate bowl, whisk together the almond milk, egg and melted coconut butter.
    3. Mix the dry and wet ingredients together and whisk until smooth.
    4. Fold in frozen berries. (save a few to sprinkle on top of the stack before you serve)
    5. Warm a greased griddle or frying pan over medium heat. Pour the batter onto the griddle and brown on both sides.
    6. Flip onto plates, sprinkle with extra berries and drizzle with warm syrup.
    7. Dig in!

1 1/2 cups all-purpose flour {for gluten free substitute with almond meal -which I do a lot even though I’m not GF!}

3 1/2 teaspoons baking powder

1/2 cup Chia seeds

1/4 cup flax seed oil

1 teaspoon salt

1 tablespoon coconut sugar

1 1/4 cups almond milk

1 egg

4 tablespoons coconut butter, melted

1/2 cup frozen blueberries and raspberries
