Liza’s Ranch Cookies

What makes you sneak into the kitchen, in the middle of the night?  What beckons you when you are heading to bed – just one more bite. “I can’t leave that broken one behind, I’ll just eat this last piece, I promise I won’t touch it tomorrow,  I’ll work out twice, this will be the last time”.  Had any of these conversations with yourself before?  I sure have. Yup, there are just some foods that warrant, no deserve, a midnight party in the kitchen.

Ranch Cookies || Sweet ‘n Salty, Chocolatey, Crunchy, Yum!

These Ranch Cookies are one of those occasions.
Throw restraint to the wind and have yourself an indulgence party, because you are going to love them right out of the oven, dunked in milk, a snack on the run, crumbled on ice cream….they even pair nicely with a glass of red wine at midnight, yes they certainly do.  They make great gifts; house warming, hostess, birthday, dinner party, wedding – you will want to share these delicious morsels of tasty, crunchy, chewy, sweet and savory cookies from heaven with everyone you love and meet – and now you can.

Directions 

Makes about 5-6 dozen {you’re gonna want a lot around}

1.  Pre heat oven to 375
2.  combine flour, baking soda, and salt in small bowl
3.  beat butter, coconut butter, coconut sugar, brown sugar and vanilla in larger bowl until creamy
4.  Add eggs one at a time beating well – gradually adding flour mixture from small bowl
5.  Mix in all the dry goodies; cacao chips, dried cranberries, goji berries, pretzel sticks, walnuts, coconut flakes, granola and pumpkin seeds and sunflower seeds, one at a time until mixture is consistent throughout.
6.  drop golf ball size portions on to baking sheet – make sure the batter is stuffed with goodies and don’t worry if it’s all sticking out, up and messy. They’re supposed to be that way!
7.  cook for 10-15 minutes – 10 for softer cookies or longer for crunchy!

– 2 1/4 cups all-purpose flour
– 1 tsp baking soda
– 1 tsp salt
– 2 sticks softened salted butter
– 1/4 cup coconut butter
– 3/4 cup granulated coconut sugar
– 3/4 cup packed brown sugar
– 1 tsp vanilla
– 2 large eggs
– 3.5 cups cacoa chocolate chips
– 2.5 cups dried cranberries
– 1 Cup goji berries
– 2 cups broken  pretzel sticks
– 2.5 cups unsweetened shredded coconut flakes
– 1 cup walnuts
– 3 cups vanilla granola
– 2 cups dry roasted spicy pumpkin seeds
– 1 cup raw sunflower seeds
