Marinated Citrus & Teriyaki Skewers

Serves 4-6

Ingredients:

  • 8 hormone free, organic medium boneless, skinless chicken breasts
    Note:  for vegetarian version replace chicken with extra firm organic tofu
  • 1 bottle ‘Soy Vay’  Teriyaki sauce
  • 2 oranges or 1/3 cup of fresh orange juice
  • Cooking skewers

Directions:

  1. Wash and pat dry chicken breasts
  2. Cut chicken into 1 1/2 inch cubes
    **Liza’s tip:  to save time I call ahead and ask the butcher at my local grocery store to cube  the chicken for me.
  3. Transfer to large bowl
  4. Pour Teriyaki sauce over the chicken- enough to cover all of it
  5. Cut 3 oranges in half and squeeze juice over chicken
  6. Stir chicken, juice and Teriyaki sauce
  7. Cover and let chicken marinate for 30 minutes – the longer it marinates the more flavorful it will be.
  8. Skewer chicken – 5 pieces per skewer
    **Liza’s tip:  If you are using wooden skewers – let them soak in water for 20 minutes to prevent them from burning on the grill.
  9. Grill skewers on a hot grill approximately 4 minutes on each side – turning over once
  10. Remove skewers from grill and serve!!
