Apple Turkey Burgers

This has to be one of my all time favorite recipes if only because it is so darn healthy.  As a matter of fact we call these burgers ‘vitamins’ in our house…the kids love them too   These are the moistest, tastiest turkey burgers I’ve ever had – it’s hard to believe they’re so good for you.

This recipe makes 18-20 burgers – guests find it impossible to resist seconds so I always count on two per person.  It is not one of my fastest recipes so I always prep for it in the morning – I strongly advise using a food processor for all the grated vegetables.  I use a mini processor for the mint and parsley.  The nice part is you can freeze the ones you decide not to cook for up to two-three weeks.

Serve them with all the fixins, Baked Salt & Pepper Fries and you’re in burger bliss!

*Liza’s tip:  Forgo the bun and serve Apple Turkey burger on a bed of mixed greens topped with tomato wedges, avocado and your favorite vinaigrette – so delicious you won’t miss the bread!

Makes 18-20 burgers

Ingredients:

  • 2.5 pounds ground all white meat turkey
  • 1/4 olive oil
  • 1/2 cup flax seed oil
  • 2 eggs
  • 2 tbsp Kosher salt
  • 1/4 tsp black pepper
  • 2 tsp garlic pepper – My favorite is The Spice Hunter, salt free
  • 3/4 cups wheat germ
  • 2 bunches fresh mint, wash, dried and minced
  • 1 bunch Italian flat leaf parsley, wash, dried and minced
  • 6 medium size carrots – skin on, washed dried and grated
  • 4 broccoli heads, washed dried and grated – just the florets
  • 4 large Fuji apples – skin on, washed dried and grated

Directions:

* Note:  Add ingredients one by one and thoroughly mix to ensure even flavors and consistency throughout.

  1. Rinse and pat dry turkey and place in a large mixing bowl
  2. Mix in olive oil, flax seed oil, salt, pepper and garlic pepper
  3. Mix in eggs
  4. Mix in wheat germ thoroughly
  5. Mix in minced mint and parsley
  6. Mix in grated carrots
  7. Mix in grated Fuji apples
  8. Mix in grated broccoli
  9. Make medium size patties using a large serving spoon to scoop turkey
  10. Make patties round and then gently shape
  11. Cook for 6-7 minutes on each side depending on the grill.

*Freezing instructions: store in an air tight freezer container
