15 Second Shallot & Champagne Vinaigrette


Ingredients:

  • 3/4 cup good Champagne vinegar
  • 1/2 cup good olive oil
  • 1/2 cup grape seed oil
  • 1 1/2 Tbsp minced shallot
  • 1/2 tsp Kosher salt
  • 1/4 tsp black pepper

*Note: This recipe allows you to have plenty of extra dressing for your left overs!

Directions:

  1. Place minced shallot, salt, pepper and vinegar in medium size mixing bowl
  2. Slowly whisk in grape seed oil and then olive oil until thick and creamy

**Liza’s tip:  Sometimes my vinaigrette will not emulsify (blend together) no matter what I do – in that case, I just pour it into a clean glass jar, tighten the lid and shake away – presto!
