Peach Crumble
At my restaurant, The Beach House, I quickly learned that no matter how sophisticated my diners were, their favorite desserts were the old fashioned homestyle desserts. From Hot Fudge Sundaes to Apple pie I would watch grownups turn into kids as they devoured their desserts with delight! One of my favorite Beach House desserts was the Seasonal Fruit Crumble. Below is a super fast & easy recipe so you can make this your seasonal fruit crumble too – blueberry, blackberry, mango, strawberry – they are all delicious!
Serves 6-8
**Liza’s tip: I keep bags of granola and seasonal organic frozen fruit in my freezer so I’m always prepared to turn grownups into kids!
Ingredients:
- 4 – 10 ounce bags frozen organic peaches
- 3 cups granola
- 1/2 cup unsweetened coconut flakes or shredded
- 1/3 cup 100% pure maple syrup
- 6 tbsp melted butter
Directions:
- Preheat oven 400 degrees
- Rinse frozen peaches
- Place peaches in 9” glass dish – smashing them in tightly
- In a separate mixing bowl combine granola, melted butter and coconut and mix thoroughly
- Pour granola mixture on top of peaches and pack down tightly so it’s level with the dish
- Pour 1/3 cup maple syrup over the granola evenly
- Bake in the oven uncovered until fruit is bubbling 30-40 minutes
- Dish individual servings in a small bowl and top with a scoop of low fat vanilla yogurt – Yum!
**Liza’s tip: I bake this way before my guests arrive. I love the way it makes the house smell. When it’s done baking, I cover it and leave it out. Right before we sit down for dinner I stick it back in the oven set for 300 degrees – that way by the time we’re finished with dinner it’s ready to serve, nice and hot!
