Honey Oatmeal, Coconut & Cranberry Cookies

When it comes to desserts – my saying is A LOT of good and a LITTLE bit of bad!!  Being healthy doesn’t have to mean giving up everything.  It just means being aware of the choices you’re making and knowing your limits.  These cookies are chewy, tasty, healthy and delicious.  The perfect finish to a light lunch or afternoon snack with a big glass of milk or a cup of hot tea.

Makes 15-20 Cookies

**Liza’s cheat sheet: If you need to whip them up fast – you can buy pre made oatmeal cookie dough at the store and just add in the cranberries & coconut.

**Liza’s tip:  Preheat the oven to 250 and warm them up for 5-7 minutes to serve them warm and soft!

Ingredients:
  • 3 tbsp butter – soft
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 1 egg
  • 1 tbsp water
  • 1/2 cup whole wheat flour
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1 1/2 cups oatmeal
  • 1 cup dried cranberries
  • 1 cup shredded unsweetened coconut
Directions:
  1. Preheat oven to 350.
  2. Mix together butter, brown sugar, honey, egg, and water thoroughly
  3. In a separate bowl, combine dry ingredients and sift together.
  4. Stir in the Oatmeal to the dry ingredients.
  5. Add dry ingredients to the wet and stir thoroughly
  6. Add in coconut and cranberries last
  7. Make cookies by using a tablespoon to scoop batter then drop on to cookie sheet
    *Note:  Don’t forget to line cookie sheet with recycled tin foil
  8. Bake for 15-17 minutes
