Dinner: Weeknight Dinner Party
The week night dinner menus are designed with a time frame in mind – considering that everyone needs to be up early the next morning. On these nights, I forgo the cocktails, heavy appetizers, multiple courses and wines. You want to keep the evening streamlined so you and your guests can have a lovely evening without sacrificing a good night’s sleep…of course if the party is just too fun to end, knock yourself out!
Ideal for 2-8 people.
*Tip: Open the wine ahead of time and place on the table. Toss the salad as soon as you take the fish out of the oven and place on the table. That way as soon as the fish is plated and served you’re ready to make a toast and dig in!
Mediterranean White Fish Smothered in Roasted Tomatoes, Capers & Olives
Watercress Salad with Toasted Pine Nuts and Manchego Cheese
Tossed in a Lemon Olive Oil Vinaigrette
Homemade Peach Crumble topped with Low-Fat Vanilla Frozen Yogurt
Pinot Noir – The fish is meaty and the flavors are strong, making it perfect for pairing with a light red wine or a dry white wine, such as a Sauvignon Blanc.
